Light peat wafting from the sweet grist handles the oak-induced date and walnut cake with aplomb. The smoke is not slow coming forward and acts as a cushion to the multi-layers of crisp sugars, muscovado- and Demerera-type which follow in its train. An excellent spice radiates from the developing hickory and Dominican-style cocoa. A bitter marmalade edge.
