The Cabernet Sauvignon and Cinsault were harvested on the same day and whole-bunch pressed together. The juice was immediately transferred to a cold settling tank to minimise colour extraction from the skins. After settling, the pale pink juice was fermented cold, predominantly in stainless steel, with 15% fermented in old 500L barrels. The wine remained on its lees for four months before bottling.
