Inzalo French Oak Agave Spirit 750ml

The inaugural production of our French Oak Rested single barrel, utilising 100L newly refurbished medium toasted French Oak barrels. Similar to our approach with the Pinotage Barrel Rested, we use a two-fill approach, filling the barrel first with a high-strength 64% spirit and resting for three months, allowing for the extraction of a dark amber colour, marmalade and spice. We then refill the barrel with new 55% spirit and rest for a new 3 month period, using the lower strength alcohol to extract honey, sweet spice and provide a softening to the tannins extracted in the first resting. The two spirits of 64% and 55% are combined, creating a soft synergy of Christmas spice, honey and oak, with a long velvety and saline finish.
