Kalamata is a famous Greek cultivar with deep purple flesh and a fruity flavour with slight bitterness. Kalamata olives are harvested only when they turn black and fully ripe. Our chefs paired this delicious black olive with the classic aromatics, rosemary and bay leaves.

All our olives are grown on the farm and harvested between March and June. Babylonstoren Farm has more than 60 hectares of olive groves. The deep sandstone soil and our Mediterranean climate provide ideal conditions for cultivating olives.
