Illimis Cinsault 750ml
WINE OF ORIGIN DARLING
VINEYARD: Grapes for this wine are sourced from an old bushvine vineyard that was planted in 1974 in Darling on well-drained, red, loam soils with granitic origin. This Cinsault is made in a more delicate style and is intensely aromatic, yet presents a layered complexity from this old site.
VINIFICATION: Grapes were picked by hand on 27th February and 1st March. 100% whole bunch, spontaneous fermentation. Pressed after 12 days on the skins. Aged in neutral 225L barrels for 7 months. Lightly filtered prior to bottling.
TASTING NOTES: Indulging bouquet of turkish delight, cocoa, redcurrants, and black cherry notes. Fresh sage, thyme and pancetta on the palette, complemented by white pepper and earthy spice. Serious in its depth yet effortlessly light, this ethereal wine unveils its intricate layers with finesse, leaving a trail of fine tannins that linger on the palate. FOOD PAIRING: Seared tuna, vegetarian dishes, Asian flavours, dim sum, pork.
