VINEYARD: Grapes are sourced from two vineyards, planted in 2007 and 2015 respectively, on the same property in Wellington. The older site is bushvines, while the younger vineyard is trellised. Clay soils with pockets of shale and schist deliver a wine with fine, chalky tannins and beautiful aromas with a long finish.
VINIFICATION: Grapes were picked by hand on 14th and 15th February and kept in cold storage overnight. 60% whole bunch, spontaneous fermentation. Pressed after 11 days on the skins. Aged in neutral 225L barrels for 7 months. Lightly filtered prior to bottling.
TASTING NOTES: Inviting toasted marshmallows, pomegranate, hazelnut and nutmeg notes on the nose. Discover buchu, prickly pear, and vibrant cherries on the palette of this delicate wine, accompanied by allspice and cardamom, leading to a signature finish characterized by savoury notes, and refined, chalky tannins.
FOOD PAIRING: Fish such as galjoen or tuna, eggplant dishes, pasta, red meat, rich stews, camembert.
